Beets are a liver-loving food, so fermenting them and turning them into a drink? Well now we're talking blood purifying, detox-facilitating and kidney-supporting superpowers. Bring on the Beet Kvass. (And by the by, 'kvass' is Russian for 'beverage'.) It's the original sports drink.
I will be demonstrating how to make beet kvass, and talking about some of the benefits behind Fermentation at Black Diamond's Makers and Growers Guild and Market. The good folks at the Market are hosting a full day Fermentation Festival, featuring many demos by local fermentation enthusiasts, yours truly included.
